It's somewhere out there really hidden. Though strangely google more redirects to apocalypse while searching for interceptor.

 

From memory.

 

Beginner - few UFOs (mostly 3-5) - UFOs don't have armour.

Experienced - more UFOs but still should be same pack - still no armour. By more UFOs I mean more bigger packs but should not exceed 5.

Veteran - same as Experienced but UFOs have armour

Genius - more UFOs packs of 5 are common and later packs of 7-8.

Superhuman - even more UFOs packs of 5 then packs of 10. You can even fight against 3 Phantasms + 4 specters + 3 wraiths or 2 wraiths + 1 Shade or even a fleet of 5 Phantasms.

 

Also the number of UFOs at the final mission is bigger the higher the difficulty.

 

Also for the beginner and experienced (and possibly veteran) corporations hire mercenary pilots to defend their outposts and mines. The higher level the less of them. Forget about them on genius and superhuman.

 

There is also of course difference in the amount of money you start with - but that is common to all x-com games (except Enforcer ;) )
